A Wheat Berry is essentially a whole hard white or red winter wheat kernel that has been boiled to softening. It is great to add to breads and other recipes to add chewiness and whole grain goodness.
To prepare: Wash hard white winter wheat. Place in 7 cups cold water in a large pot. Boil, stir and simmer for 1 hour. Once softened, drain off water and they are done! Use them in a neat salad like this or store in your fridge for something else later.
